Ingredients

  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 2 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Steam the asparagus until tender, about 5 minutes. Set aside.

  3. In a large mixing bowl, combine the cooked rice, cheddar cheese, diced onion, minced garlic, and steamed asparagus.

  4. Season with salt and pepper, then mix until well combined.

  5. Transfer the mixture to a greased casserole dish.

  6. In a small bowl, mix together the grated Parmesan cheese, breadcrumbs, and melted butter.

  7. Sprinkle the breadcrumb mixture evenly over the casserole.

  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

  9. Remove from the oven and let it cool for a few minutes before serving.
