How To Make Mixed Greens with Nuts and Dried Fruit

Whip up this easy and refreshing mixed greens that’s made using pears, cranberries, and nuts tossed in a mustard-vinegar dressing for a nutty bite.

Preparation: 15 minutes
Cooking: 10 minutes
Total: 25 minutes

Serves:

Ingredients

  • 1cupwalnuts,(about 4 oz)
  • 1cuppecan halves,(about 4 oz)
  • 1large shallot,minced
  • ¼cupsherry vinegar
  • 1tbspdijon mustard
  • 6tbspextra virgin olive oil
  • ¼cupwalnut oil
  • salt and freshly ground pepper,to taste
  • 5ozsalad greens,(4 bags), washed
  • 1cupdried pears,(4 oz)
  • 1cupdried cranberries,(4 oz)

Instructions

  1. Preheat the oven to 350 degrees F. Spread the nuts on a large baking sheet and bake for 10 minutes, or until golden and fragrant. Let cool, then coarsely chop.

  2. In a large bowl, combine the shallot, vinegar, and mustard. Whisk in the olive oil and walnut oil in a thin, steady stream. Season with salt and pepper.

  3. Add the mixed greens, nuts, and dried pears, and cranberries to the bowl and toss.

  4. Serve immediately and enjoy.
