Ingredients

  • 4 medium-sized beetroots, peeled and diced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tbsp raw honey

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the diced beetroots with olive oil, salt, and pepper.

  3. Spread the beetroots on a baking sheet and roast for 25 minutes or until tender.

  4. In a serving bowl, arrange the mixed salad greens.

  5. Top the greens with the roasted beetroots.

  6. Sprinkle with crumbled feta cheese and chopped walnuts.

  7. Drizzle raw honey over the salad.

  8. Toss gently to combine all the ingredients.

  9. Serve and enjoy!
