How To Make Balsamic Chicken & Peach Salad

Ingredients

  • 4 chicken breasts
  • 2 peaches, sliced
  • 8 cups mixed salad greens
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.

  2. Preheat grill to medium heat and cook the chicken for about 6-8 minutes per side, until fully cooked.

  3. In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper.

  4. Once the chicken is cooked, remove from grill and let it rest for a few minutes.

  5. In the meantime, place the sliced peaches on the grill and cook for about 2-3 minutes per side, until slightly charred.

  6. Slice the chicken into thin strips.

  7. In a large bowl, toss the mixed salad greens with the balsamic dressing.

  8. Divide the dressed greens onto four plates and top with grilled chicken and sliced peaches.

  9. Serve immediately.
