How To Make Summery Mushroom & Truffled Herb Salad

Ingredients
- 8 ounces of mixed mushrooms (such as cremini, shiitake, or oyster), thinly sliced
- 2 tablespoons of olive oil
- 1 tablespoon of truffle oil
- 2 teaspoons of fresh lemon juice
- 1 teaspoon of Dijon mustard
- 1 garlic clove, minced
- Salt and pepper, to taste
- 4 cups of mixed salad greens
- 1/4 cup of fresh herbs (such as parsley, basil, and chives), chopped
Instructions

In a large skillet, heat olive oil over medium-high heat. Add the mushrooms and sauté until golden brown and tender, about 5 minutes. Remove from heat and set aside.

In a small bowl, whisk together the truffle oil, lemon juice, Dijon mustard, garlic, salt, and pepper.

In a large salad bowl, combine the mixed salad greens, sautéed mushrooms, and fresh herbs. Drizzle the truffle dressing over the salad and toss to combine.
