Serves:

Ingredients

  • 8 ounces of mixed mushrooms (such as cremini, shiitake, or oyster), thinly sliced
  • 2 tablespoons of olive oil
  • 1 tablespoon of truffle oil
  • 2 teaspoons of fresh lemon juice
  • 1 teaspoon of Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 4 cups of mixed salad greens
  • 1/4 cup of fresh herbs (such as parsley, basil, and chives), chopped

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the mushrooms and sauté until golden brown and tender, about 5 minutes. Remove from heat and set aside.

  2. In a small bowl, whisk together the truffle oil, lemon juice, Dijon mustard, garlic, salt, and pepper.

  3. In a large salad bowl, combine the mixed salad greens, sautéed mushrooms, and fresh herbs. Drizzle the truffle dressing over the salad and toss to combine.

  4. Serve the summery mushroom & truffled herb salad immediately.
