- 8 cups of mixed spring greens
- 1/4 cup of freshly squeezed lemon juice
- 1/4 cup of extra virgin olive oil
- 1 teaspoon of honey
- 1/2 teaspoon of Dijon mustard
- Salt and pepper to taste

In a small bowl, whisk together the lemon juice, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.
