  • 8 cups of mixed spring greens

  • 1 teaspoon of honey
  • 1/2 teaspoon of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the lemon juice, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.

  2. In a large salad bowl, combine the mixed spring greens.

  3. Drizzle the dressing over the greens and toss until well coated.
