Ingredients

  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 2 cups mixed salad greens
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the mushrooms and cook until they are tender and golden brown, about 10-12 minutes.

  2. In a small bowl, whisk together the balsamic vinegar, minced garlic, salt, and pepper.

  3. In a large bowl, combine the cooked mushrooms, mixed salad greens, cherry tomatoes, red onion, feta cheese, and parsley.

  4. Drizzle the dressing over the salad and toss to combine.

  5. Serve the cooked mushroom salad immediately.
