
How To Make Garlic Butter Potatoes
These garlic butter potatoes are cut uniquely with the small slits to absorb more butter and cheese, for a satisfying and delectable side dish!

Ingredients
- 1½lbssmall potatoes
- ¼cupbutter,melted
- ¼cupextra virgin olive oil
- 3garlic cloves,minced
- kosher salt
- freshly ground black pepper
- 1cupmozzarella,shredded
- ½cupparmesan,freshly grated
- ¼cupparsley,finely chopped
Instructions

Preheat the oven to 375 degrees F and line a large baking sheet with parchment paper.

Make small slits in each potato, like an accordion, making sure not to cut all the way through. Place the potatoes on a large sheet pan.

In a small bowl, whisk together the melted butter, olive oil, and garlic. Brush the mixture over the potatoes, then season them with salt and pepper.

Bake for 20 minutes or until the slits are starting to separate and the potatoes are beginning to turn golden. Brush the potatoes with more of the melted butter mixture then sprinkle mozzarella and Parmesan on top.

Bake for another 23 to 25 minutes or until the potatoes are crispy on the outside and tender on the inside.

Garnish with parsley and serve warm. Enjoy!
