A savory frittata with leftover lamb perfect for breakfast, brunch or dinner.

Ingredients
- 8 eggs, beaten
- 1 cup of leftover cooked lamb, chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of chopped fresh parsley
- Salt and black pepper
- 1 tablespoon of olive oil
Instructions

Preheat oven to 350°F.

In a large bowl, whisk eggs, feta, parsley, salt and black pepper until well combined.

Heat olive oil in a oven-safe skillet over medium heat.

Add cooked lamb to the skillet and cook for 2 minutes.

Pour the egg mixture over the lamb and cook for 5 minutes or until the edges start to set.

Transfer the skillet to the oven and bake for 10-15 minutes or until the frittata is golden and set in the middle.

Slice into wedges and serve hot.
