How To Make Leftover Lamb Frittata Recipe

A savory frittata with leftover lamb perfect for breakfast, brunch or dinner.

Ingredients

  • 8 eggs, beaten
  • 1 cup of leftover cooked lamb, chopped
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of chopped fresh parsley
  • Salt and black pepper
  • 1 tablespoon of olive oil

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk eggs, feta, parsley, salt and black pepper until well combined.

  3. Heat olive oil in a oven-safe skillet over medium heat.

  4. Add cooked lamb to the skillet and cook for 2 minutes.

  5. Pour the egg mixture over the lamb and cook for 5 minutes or until the edges start to set.

  6. Transfer the skillet to the oven and bake for 10-15 minutes or until the frittata is golden and set in the middle.

  7. Slice into wedges and serve hot.
