How To Make Chicken, Bacon & Potato Stew

Ingredients
- 4 slices of bacon, chopped
- 1 lb chicken breasts, cut into chunks
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 potatoes, peeled and cubed
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

Add the chicken to the pot and cook until browned on all sides. Remove the chicken and set aside.

Add the onion, garlic, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.

Add the potatoes, chicken broth, dried thyme, bay leaf, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.

Return the chicken and bacon to the pot. Stir well and let simmer for another 10 minutes.

Remove the bay leaf and discard. Serve the stew hot, garnished with fresh parsley.
