How To Make Richard Blais’s Cauliflower Steak Recipe
This vegetarian dish features roasted cauliflower steaks topped off with a flavorful herbed yogurt sauce.

Ingredients
- 1 head cauliflower
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/2 cup Greek yogurt
- 1 tbsp chopped chives
- 1 tbsp chopped parsley
- 1 tbsp lemon juice
- 1 garlic clove, minced
Instructions

Preheat oven to 425°F and line a baking sheet with parchment paper.

Cut the cauliflower head into 1-inch slices, discarding the stem.

Brush both sides of the cauliflower with olive oil and season with salt and pepper.

Place the cauliflower slices on the prepared baking sheet and roast in the oven for 20-25 minutes, flipping halfway through, until tender and lightly browned.

While the cauliflower is roasting, make the herbed yogurt sauce by combining Greek yogurt, chives, parsley, lemon juice, garlic, and salt in a small bowl.

Serve the cauliflower steaks topped with the herbed yogurt sauce.
