A hearty, comforting and healthy vegetarian sweet potato casserole made in the crockpot!

Ingredients

  • 4 medium sweet potatoes, peeled and sliced
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/2 cup chopped pecans
  • Salt to taste

Instructions

  1. In a bowl, mix maple syrup, melted coconut oil, cinnamon, nutmeg, ginger, and salt.

  2. Layer sweet potato slices in crockpot and pour the mixture over.

  3. Sprinkle chopped pecans on top.

  4. Cover and cook on high for 4 hours or until sweet potatoes are tender.
