Ingredients

  • 1 cup quinoa, rinsed
  • 1 can diced tomatoes, drained
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili powder
  • 2 cups vegetable broth
  • salt and pepper to taste

Instructions

  1. Combine all ingredients in the crockpot and stir well.

  2. Cover and cook on low for 4-5 hours, or until the quinoa is cooked and the vegetables are tender.

  3. Serve hot.
