Deliciously flavorful and healthy, this teriyaki tofu recipe is perfect for a vegetarian meal.

Ingredients

  • 1 block of firm tofu, drained and cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, finely grated
  • 1 tbsp cornstarch
  • 2 tbsp water
  • sesame seeds, for garnish
  • green onion, sliced, for garnish

Instructions

  1. In a small bowl, whisk together soy sauce, brown sugar, honey, garlic, and ginger.

  2. Place tofu in a slow cooker and pour sauce mixture over it. Stir to coat tofu evenly.

  3. Cover slow cooker and cook on low for 4 hours.

  4. In a small bowl, whisk cornstarch and water until smooth. Add mixture to slow cooker and stir to combine.

  5. Increase heat to high and cook for an additional 15 minutes, or until sauce thickens.

  6. Serve over steamed rice and sprinkle sesame seeds and green onions on top.
