Serves:

Ingredients

  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp paprika
  • 1 can (14 oz) chickpeas, rinsed and drained
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 large sweet potato, peeled and cubed
  • 1 medium zucchini, sliced
  • Salt and pepper to taste
  • Cooked rice or naan bread for serving

Instructions

  1. In a crockpot, combine all the ingredients except for the sweet potato, zucchini, salt, and pepper.

  2. Mix well and add the sweet potato cubes.

  3. Cover and cook on low heat for 5 hours and 30 minutes.

  4. Add the sliced zucchini, salt, and pepper to taste.

  5. Cover and cook for an additional 30 minutes.

  6. Serve with cooked rice or naan bread.
