Ingredients

  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • salt and pepper to taste
  • 1 cup vegetable broth
  • shredded cheddar cheese (optional, for topping)
  • chopped cilantro (optional, for topping)

Instructions

  1. Add all ingredients (except cheese and cilantro) to a crockpot and stir to combine.

  2. Cook on high for 4 hours or low for 6-8 hours.

  3. Serve hot, topped with shredded cheddar cheese and chopped cilantro if desired.
