How To Make Red Wine Risotto

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 ½ cups Arborio rice
  • ½ cup red wine
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a medium saucepan, heat the broth over low heat until it simmers.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Add the rice to the skillet and stir to coat it with the oil. Cook for 1-2 minutes until slightly toasted.

  4. Add the red wine and cook until it has been absorbed by the rice, stirring constantly.

  5. Add a ladleful of the simmering broth to the skillet and cook until it has been absorbed, stirring frequently. Repeat this step, adding more broth each time, until the rice is creamy and al dente, about 20-25 minutes.

  6. Remove the skillet from the heat and stir in the Parmesan cheese. Season with salt and pepper to taste.

  7. Serve the risotto hot, garnished with fresh parsley.
