How To Make Microwave Crab Risotto with Chilli Crab Toasts

- 1 cup Arborio rice
- 1 cup chicken broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup chopped cooked crab meat
- 1/4 cup chopped fresh parsley
- 2 tbsp butter
- Salt and pepper, to taste
- 4 slices of bread
- 1/4 cup chopped red chili
- Olive oil, for toasting
Instructions

In a microwave-safe dish, combine the rice, chicken broth, white wine, onion, and garlic. Cover and microwave on high for 15 minutes, stirring halfway through.

Stir in the Parmesan cheese, crab meat, parsley, butter, salt, and pepper. Microwave on high for another 5 minutes, or until the rice is tender and creamy.

While the risotto is cooking, make the chilli crab toasts. Spread olive oil on both sides of the bread slices and sprinkle with chopped red chili. Toast in a microwave or grill until crispy.

Serve the crab risotto hot with the chilli crab toasts on the side.
