How To Make Garlic & Lemon Thyme Poached Potatoes

Ingredients
- 1.5 pounds small potatoes
- 4 cloves of garlic, minced
- 2 tablespoons fresh lemon juice
- 2 sprigs of fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley, for garnish
Instructions

In a large pot, add the potatoes, garlic, lemon juice, thyme, salt, and pepper.

Fill the pot with enough water to cover the potatoes.

Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 20-25 minutes, or until the potatoes are tender when pierced with a fork.

Drain the potatoes in a colander and return them to the pot.

Add the butter to the pot and gently toss the potatoes until the butter is melted and evenly coated.

Transfer the potatoes to a serving dish and garnish with chopped fresh parsley.
