How To Make Vegan Chickpea Salad Sandwich

Ingredients
- 1 can chickpeas, drained and rinsed
- 1/4 cup vegan mayonnaise
- 2 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1/4 red onion, diced
- 2 stalks celery, diced
- Salt and pepper to taste
- 8 slices whole wheat bread
- Lettuce, tomato, and avocado for serving
Instructions

In a medium bowl, mash the chickpeas with a fork or potato masher until they are mostly broken down.

Add in the vegan mayonnaise, dijon mustard, apple cider vinegar, red onion, celery, salt, and pepper. Mix well to combine.

Toast the bread slices and assemble the sandwiches with the chickpea salad, lettuce, tomato, and avocado.
