Ingredients

  • 8 slices of whole grain bread
  • 4 tbsp vegan butter
  • 8 slices of fresh tomato
  • 1/2 cup vegan mozzarella cheese, sliced
  • 1/4 cup fresh basil leaves
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat a panini press or a skillet over medium heat.

  2. Spread a thin layer of vegan butter on one side of each slice of bread.

  3. On four slices of bread, layer the tomato slices, mozzarella cheese, and basil leaves.

  4. Top with the remaining slices of bread, buttered side up.

  5. Place the sandwiches on the panini press or skillet and cook for 3-5 minutes, or until the bread is golden brown and the cheese is melted.

  6. Drizzle with balsamic glaze before serving.
