How To Make Vegan Tofu Banh Mi Recipe

A Vietnamese-inspired sandwich with grilled tofu, pickled veggies, fresh herbs, and spicy mayo on a crispy baguette.

Serves:

Ingredients

  • 1 block of extra firm tofu, sliced into 8 pieces
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tbsp sugar
  • 4 small baguettes, lightly toasted
  • 1/2 cup vegan mayonnaise
  • 1-2 tbsp sriracha or hot sauce
  • 1 cup pickled carrots and daikon radish
  • 1/2 cucumber, sliced thinly
  • 1/2 jalapeno, seeded and sliced thinly
  • Fresh cilantro and mint leaves

Instructions

  1. In a shallow dish, mix together soy sauce, rice vinegar, and sugar. Marinate tofu in mixture for 20-30 minutes.

  2. Heat grill pan or skillet over medium-high heat. Grill tofu for 3-4 minutes on each side, or until lightly charred.

  3. In a small bowl, mix together vegan mayonnaise and sriracha or hot sauce. Adjust to your desired spiciness.

  4. Assemble sandwiches by spreading spicy mayo on baguette. Add grilled tofu, pickled veggies, cucumber, jalapeno, and herbs.

  5. Serve immediately.
