This sandwich is a vegan twist on a classic buffalo chicken sandwich, featuring crispy cauliflower and spicy sauce.

Ingredients

  • 1 head cauliflower, chopped into florets
  • 2/3 cup all-purpose flour
  • 2/3 cup plant-based milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup buffalo sauce
  • 4 buns, toasted
  • Vegan ranch or blue cheese dressing, for serving
  • Leafy greens, such as lettuce or spinach

Instructions

  1. Preheat oven to 425°F.

  2. In a bowl, whisk together flour, plant-based milk, garlic powder, onion powder, smoked paprika, salt and pepper to make a batter.

  3. Dip cauliflower florets into the batter to coat, then transfer to a baking sheet lined with parchment paper.

  4. Bake for 25-30 minutes, until golden and crispy.

  5. Remove from oven and toss with buffalo sauce.

  6. Assemble sandwich with toasted buns, buffalo cauliflower, leafy greens, and vegan ranch or blue cheese dressing.
