How To Make Vegan Tempeh Reuben Sandwich Recipe

A vegan twist on the classic Reuben sandwich, with tempeh, sauerkraut, vegan cheese, and thousand island dressing.

Serves:

Ingredients

  • 8 slices of rye bread
  • 1 block of tempeh, sliced
  • 1 cup of sauerkraut, drained
  • 4 slices of vegan Swiss cheese
  • 1/4 cup of vegan thousand island dressing
  • 2 tbsp of olive oil
  • salt and pepper, to taste

Instructions

  1. Heat olive oil in a pan over medium heat.

  2. Add sliced tempeh and cook until browned, about 5 minutes per side.

  3. Toast rye bread.

  4. Assemble sandwich by spreading thousand island dressing on one side of the bread, then layering tempeh, sauerkraut, and vegan Swiss cheese. Repeat with remaining ingredients.

  5. Grill sandwich in a pan or on a griddle until cheese is melted, about 3-5 minutes per side.

  6. Serve hot and enjoy!
