How To Make Low Carb Instant Pot Pot Roast Recipe
A hearty and flavorful pot roast that’s low in carbs and made in a fraction of the time using the Instant Pot.
Serves:
Ingredients
- 2 lbs beef chuck roast
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 3 celery stalks, chopped
- 3 carrots, chopped
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 bay leaf
- 1 tsp dried thyme
Instructions

Set Instant Pot to “Saute” and heat up the olive oil.

Sear the beef roast on all sides until browned. Remove and set aside on a plate.

Add the garlic, onion, celery, and carrots to the Instant Pot and saute for 5 minutes.

Add in the beef broth, tomato paste, bay leaf, and dried thyme. Stir to combine.

Place the beef roast on top of the vegetables and broth mixture.

Close the lid and set the Instant Pot to “Manual” and cook on high pressure for 60 minutes.

Once done, perform a quick release and carefully open the lid.

Remove the beef roast and let rest for 10 minutes before slicing.

Serve with the vegetable mixture and broth as desired.
