A delicious and healthy egg salad recipe made in an Instant Pot with low carb ingredients.

Ingredients

  • 6 large eggs
  • 1/2 cup of mayonnaise
  • 1 tsp of mustard
  • 2 tbsp of diced pickles
  • 1 tbsp of diced red onion
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Place the eggs in the Instant Pot and add enough water to cover them.

  2. Close the lid of the Instant Pot and set it to manual pressure cook for 5 minutes.

  3. When the cooking cycle is complete, use a quick pressure release.

  4. Carefully remove the eggs from the Instant Pot and let them cool.

  5. Peel the eggs and cut them into small pieces.

  6. In a large bowl, mix together the mayonnaise, mustard, pickles, red onion, salt, and pepper.

  7. Add the chopped eggs to the mayonnaise mixture and stir until well combined.

  8. Garnish with paprika and serve.
