How To Make Low Carb Instant Pot Broccoli Cheese Soup Recipe
A creamy and delicious soup made with broccoli and cheese, perfect for a low carb diet.

Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions

Set Instant Pot to sauté mode and add olive oil.

Add chopped onion and minced garlic, sauté for 2-3 minutes until onions are translucent.

Add broccoli florets and chicken or vegetable broth, stir to combine.

Close lid and pressure cook on high for 4 minutes.

Use quick release method to release pressure.

Use immersion blender or transfer mixture to blender to puree until smooth.

Return mixture to Instant Pot and set to sauté mode, stir in heavy cream and shredded cheddar cheese until cheese is melted.
