How To Make Low Carb Chili Recipe

A hearty, flavorful chili that’s low in carbs and perfect for a cozy night in.

Serves:

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (8 oz) tomato sauce
  • 1/2 cup water
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 jalapeno pepper, seeded and finely chopped (optional)

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the onion, green pepper, and garlic to the pot, and sauté until softened, about 5-7 minutes.

  3. Stir in the chili powder, cumin, paprika, salt, and black pepper, and cook for another minute or two.

  4. Add the diced tomatoes, tomato sauce, and water to the pot, and bring to a simmer.

  5. Stir in the kidney beans and jalapeno, if using, and let the chili simmer for at least an hour, stirring occasionally.

  6. Serve hot, garnished with your favorite toppings (such as shredded cheese, sour cream, or chopped cilantro).
