  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp granulated sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 cup strawberries, sliced
  • Whipped cream, for serving (optional)

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.

  3. Add in the melted butter, eggs, almond milk, and vanilla extract. Mix well until smooth.

  4. Grease a muffin tin and divide the batter evenly between the 4 cups.

  5. Bake for 18-20 minutes or until golden brown.

  6. Let cool for a few minutes before removing from the muffin tin.
