  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup brown sugar substitute
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1 can (15 oz) pure pumpkin puree
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk together almond flour, coconut flour, brown sugar substitute, salt, cinnamon, ginger, and nutmeg.

  3. In a separate bowl, whisk together eggs, pumpkin puree, heavy cream, and vanilla extract.

  4. Slowly mix the pumpkin mixture into the flour mixture until fully combined.

  5. Pour the mixture into a 9-inch pie dish and bake for 45-50 minutes until the center is set.

  6. Let the pie cool before serving.
