  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup Lakanto monkfruit sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 pint fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.

  3. Add the melted butter, eggs, and vanilla extract, and mix until a dough forms.

  4. Divide the dough into 4 equal parts and shape them into shortcakes.

  5. Bake for 15-20 minutes or until lightly golden.

  6. Let the shortcakes cool before slicing them in half horizontally.

  7. Spread whipped cream on the bottom half of the shortcake, and top with sliced strawberries.

  8. Place the top half of the shortcake on top, and repeat with the whipped cream and strawberries.

  9. Serve and enjoy!
