How To Make Joe’s Special Scramble Recipe

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups fresh spinach
  • 8 eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 cup grated Parmesan cheese


  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease.

  2. Add the diced onion and minced garlic to the skillet and cook until the onion is softened.

  3. Stir in the fresh spinach and cook until wilted.

  4. In a separate bowl, whisk together the eggs, salt, black pepper, and dried oregano.

  5. Pour the egg mixture over the cooked ground beef and vegetables in the skillet. Stir gently to combine.

  6. Cook over medium-low heat, stirring occasionally, until the eggs are fully cooked and scrambled.

  7. Sprinkle the grated Parmesan cheese over the top of the scramble and cook for an additional minute until melted.

  8. Serve hot and enjoy!
