How To Make Healthier Potato Salad
A lighter and healthier version of classic potato salad, packed with flavor and perfect for summer gatherings.
Serves:
Ingredients
- 1.5 pounds of baby potatoes
- 1/4 cup of Greek yogurt
- 2 tablespoons of light mayonnaise
- 1 tablespoon of Dijon mustard
- 1/4 cup of diced red onion
- 1/4 cup of diced celery
- 1/4 cup of diced dill pickles
- 1 tablespoon of fresh dill, chopped
- Salt and pepper to taste
Instructions

Wash the baby potatoes and cut them in half. Boil them in salted water until tender, about 10-15 minutes. Drain and let cool.

In a large mixing bowl, combine Greek yogurt, light mayonnaise, and Dijon mustard. Mix well to combine.

Add the cooled potatoes, red onion, celery, dill pickles, and fresh dill to the bowl. Gently toss to coat everything evenly.
