  • 1 cup cornmeal
  • 1 cup gluten-free all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda

  • 2 eggs
  • 1 cup milk
  • 1/4 cup melted butter
  • 1/4 cup honey

Instructions

  1. Preheat oven to 425°F and grease an 8-inch square baking dish.

  2. In a medium bowl, mix together cornmeal, gluten-free flour, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together eggs, milk, melted butter, and honey.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Pour the batter into the greased baking dish and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

  6. Let cool for 5 minutes before slicing and serving.
