Ingredients

  • 1 cup of yellow cornmeal
  • 1/2 cup of gluten-free all-purpose flour
  • 1/4 cup of sugar
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1 cup of milk
  • 1/4 cup of vegetable oil
  • 2 eggs

Instructions

  1. Preheat oven to 400°F.

  2. Mix all dry ingredients in a bowl.

  3. Add milk and vegetable oil, and stir until combined.

  4. Beat eggs in a separate bowl, then add to the mixture.

  5. Pour mixture into a greased 8-inch square baking dish.

  6. Bake for 25 minutes or until it passes the toothpick test.

  7. Let it cool before serving.
