How To Make Easy Kedgeree Recipe
A flavorful and simple dish with fragrant rice, smoked fish, and eggs.
Serves:
Ingredients
- 1 cup basmati rice
- 2 cups water
- 1 tsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp chili powder (optional)
- 1 cup peas
- 1 cup cooked smoked fish, flaked
- 4 hard-boiled eggs, peeled and quartered
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lemon wedges, for serving
Instructions

In a saucepan, rinse the rice under cold water until the water runs clear. Drain.

In the same saucepan, add the water and bring it to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.

In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.

Add the curry powder, turmeric, cumin, paprika, and chili powder (if using) to the pan. Stir well to coat the onion and garlic in the spices.

Add the cooked rice, peas, and flaked smoked fish to the pan. Stir gently to combine everything together. Cook for an additional 5 minutes or until the peas are cooked through.

Season with salt and pepper to taste.

Serve the kedgeree hot, topped with the quartered hard-boiled eggs. Garnish with fresh cilantro and lemon wedges on the side.
