Ingredients

  • 1 lb pickled herring fillets
  • 1 cup white vinegar
  • 1/2 cup white sugar
  • 1/2 cup water
  • 1 small onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 tsp black pepper
  • 4 slices rye bread
  • Pickled vegetables, for serving (optional)

Instructions

  1. Rinse the pickled herring fillets under cold water and pat dry.

  2. In a small saucepan, combine the white vinegar, white sugar, water, onion slices, chopped dill, and black pepper. Bring to a boil and stir until the sugar dissolves.

  3. Remove from heat and let cool to room temperature.

  4. In a sealable container, layer the pickled herring fillets and the cooled pickling liquid.

  5. Cover and refrigerate for at least 4 hours, or up to 48 hours.

  6. Serve with slices of rye bread and pickled vegetables, if desired.
