Ingredients
- 8 oz. herring fillets, skin removed and diced
- 2 tbsp. diced shallots
- 2 tbsp. chopped fresh parsley
- 1 tbsp. chopped fresh chives
- 1 tbsp. chopped capers
- 1 tbsp. Dijon mustard
- 2 tbsp. lemon juice
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions

In a bowl, mix together the diced herring, shallots, parsley, chives, and capers.

In a separate bowl, whisk together the Dijon mustard, lemon juice, olive oil, salt, and pepper until well combined.

Pour the dressing over the herring mixture and toss to coat.
