A classic Scandinavian dish featuring tender herring fillets in a rich and tangy mustard sauce.

Ingredients
- 12 oz herring fillets, drained and patted dry
- 2 tbsp all-purpose flour
- 2 tbsp unsalted butter
- 1 cup milk
- 1/4 cup heavy cream
- 1/4 cup Dijon mustard
- 1 tbsp white wine vinegar
- 1 tbsp chopped fresh parsley
- Salt and black pepper, to taste
Instructions

In a large skillet, melt the butter over medium heat.

Dredge the herring fillets in flour and add them to the skillet once the butter is melted. Fry the fillets until they are golden brown on both sides, about 5 minutes total.

Remove the fillets from the skillet and set them aside.

In a small bowl, whisk together the milk, cream, mustard, vinegar, and parsley.

Add the mixture to the skillet and cook until it thickens, about 5 minutes.

Return the herring fillets to the skillet, spooning the sauce over each fillet.

Season with salt and black pepper and serve immediately.
