Ingredients

  • 4 catfish fillets
  • 1 tbsp of Cajun seasoning
  • 1 tsp of garlic powder
  • 1/4 tsp of black pepper
  • 1 tbsp of olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 lb of collard greens, chopped
  • 1 cup of chicken broth
  • Salt, to taste
  • Lemon wedges for garnish

Instructions

  1. Season the catfish fillets with Cajun seasoning, garlic powder, and black pepper on both sides.

  2. Heat the olive oil in a large skillet over medium heat.

  3. Add the seasoned catfish fillets to the skillet and cook until golden brown, about 3-5 minutes on each side. Remove from the skillet and set aside.

  4. Add the chopped onion and minced garlic to the same skillet and cook until the onion is translucent, about 3-5 minutes.

  5. Add the chopped collard greens, chicken broth, and salt to taste. Stir well.

  6. Cover and cook the collard greens until they are wilted, about 10-15 minutes, stirring occasionally.

  7. Arrange the cooked catfish fillets on top of the collard greens in the skillet.

  8. Garnish with lemon wedges and serve hot.
