  • 4 hard-boiled eggs
  • 1/2 cup mayonnaise
  • 1 tsp dijon mustard
  • 1/2 tsp white vinegar
  • Salt and pepper to taste
  • Chopped fresh chives for garnish

Instructions

  1. Peel and mash the hard-boiled eggs in a bowl.

  2. In a separate bowl, mix together the mayonnaise, dijon mustard, white vinegar, salt, and pepper.

  3. Add the mayonnaise mixture to the mashed eggs and mix well.

  4. Taste and adjust seasoning if needed.

  5. Serve on bread for sandwiches or as a topping for salads.

  6. Garnish with chopped fresh chives.
