Ingredients

  • 8 hard-boiled eggs, peeled and chopped
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/4 cup chopped chives
  • Salt and pepper to taste
  • 8 slices bread
  • Butter or mayonnaise for grilling bread

Instructions

  1. In a mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, chives, salt, and pepper. Mix well.

  2. Toast bread slices until crispy, then butter or spread mayonnaise on each slice.

  3. Place egg salad on a bread slice, top with another slice of bread and cut the sandwich in half.

  4. Serve and enjoy.
