Ingredients

  • 1 medium-sized eggplant, cut into chunks
  • 1 cup of blackberries
  • 1 banana
  • 1 cup of unsweetened almond milk
  • 1 tbsp of honey
  • 1 tsp of vanilla extract
  • ½ tsp of ground cinnamon
  • Ice cubes

Instructions

  1. Add eggplant chunks, blackberries, banana, honey, vanilla extract, cinnamon, and almond milk in a blender.

  2. Blend until smooth and creamy.

  3. Add ice cubes and blend again until smooth.

  4. Pour into glasses and serve.
