How To Make Banana Pudding with Meringue

Ingredients
- 2 ripe bananas, sliced
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 cups milk
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 24 vanilla wafers
- 3 large egg whites
- 1/4 cup granulated sugar
Instructions

Preheat the oven to 350°F (175°C).

In a medium saucepan, whisk together 1/2 cup granulated sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove from heat and whisk in the egg yolks. Return to heat and cook for an additional 2 minutes, stirring constantly.

Remove from heat and stir in the vanilla extract.

In a 2-quart baking dish, layer half of the banana slices and half of the vanilla wafers. Pour half of the pudding mixture over the top.

Repeat the layers with the remaining banana slices, vanilla wafers, and pudding mixture.

In a separate bowl, beat the egg whites until foamy. Gradually add in 1/4 cup granulated sugar, continuing to beat until stiff peaks form.

Spread the meringue over the pudding, making sure to completely cover the top.

Bake for 15-20 minutes or until the meringue is golden brown.

Remove from the oven and let cool for at least 30 minutes before serving.
