How To Make Lemon and Ginger Ice Pops
Stay chill on a hot summer day with these lemon and ginger ice pops packed with an exciting sweet blend of tangy lemons and warming ginger.

Ingredients
- 1ozfresh ginger,(2¾-inch pieces), peeled, finely chopped
- 3½cupswater
- ¾cupsugar
- 3lemons,zested
- 5tbsplemon juice,from 3 lemons
- 10half lemon slices,ultra thin, optional
Instructions

Put the ginger, water, sugar, and lemon zest in a small saucepan and bring to a simmer. Simmer until the sugar is dissolved, then remove the pan from heat, and let it get to room temperature.

Pour the mixture through a fine strainer, pressing down hard on the ginger with the back of a spoon. Mix in the lemon juice.

Pour the mixture into the ice pop molds, leaving a ¼-inch space at the top.

Place a slice of lemon in each mold, then insert the sticks and freeze until solid.
