  • 1 pre-baked pie crust
  • 1 cup shredded coconut
  • 2 cups whole milk
  • 1/3 cup cornstarch
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • Whipped cream for topping


  1. Toast the shredded coconut in a dry skillet over medium heat for 2-3 minutes, until golden brown.

  2. In a heavy-bottomed saucepan, whisk together the milk, cornstarch, sugar, salt, and egg yolks.

  3. Cook the mixture over medium heat, whisking constantly, until it thickens and comes to a boil.

  4. Remove the mixture from heat and stir in the vanilla extract, toasted coconut, and butter until the butter is melted.

  5. Pour the filling into the pre-baked pie shell and smooth the top with a spatula.

  6. Allow the pie to cool to room temperature, then chill in the refrigerator for at least 2 hours to set.

  7. Serve the pie chilled, topped with whipped cream if desired.
