  • 1/2 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/4 cup granulated sugar
  • 1/4 cup lime juice
  • 2 eggs
  • 1/4 cup coconut oil
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a mixing bowl, whisk together flour, shredded coconut, sugar, baking powder, and salt.

  3. Add the lime juice, eggs, and coconut oil to the mixing bowl and whisk to combine until smooth.

  4. Pour the batter into a greased 8×8 inch baking dish and bake for 25 minutes or until golden brown.

  5. Let the bars cool before cutting into them and dust with shredded coconut
