  1. Preheat your oven to 375°F (190°C). Spray a 9-inch (23 cm) oven-safe skillet or baking dish with cooking spray.

  2. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  3. Heat the skillet over medium heat and add the diced vegetables. Cook for 5 minutes or until they are slightly tender.

  4. Pour the egg mixture over the vegetables in the skillet. Sprinkle the shredded cheese evenly on top.

  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and lightly golden on top.

  6. Remove from the oven and let it cool for a few minutes before slicing and serving.
