Ingredients

  • 2 ripe bananas
  • 1 cup pecans, chopped
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 2 tsp vanilla extract
  • 2 tbsp bourbon
  • ½ cup brown sugar
  • 1 ¼ cups boiling water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch baking dish.

  2. Slice the bananas and arrange them in the bottom of the prepared dish. Sprinkle half of the chopped pecans on top.

  3. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

  4. Add the milk, melted butter, vanilla extract, and bourbon to the dry ingredients. Stir until just combined.

  5. Pour the batter evenly over the bananas and pecans in the dish.

  6. In a separate bowl, mix the brown sugar and boiling water until the sugar has dissolved. Carefully pour this mixture over the batter in the dish.

  7. Sprinkle the remaining chopped pecans on top.

  8. Place the dish on a baking sheet to catch any overflow and bake for 45 minutes, or until the top is golden brown and the pudding is set.

  9. Remove from the oven and let it cool slightly before serving.

  10. Serve warm with a scoop of vanilla ice cream, if desired.
