Oatmeal Creme Pies Recipe

How To Make Oatmeal Creme Pies

Recreate a childhood favorite using this oatmeal creme pies recipe. They come together in less than an hour and is perfect with a glass of milk.

Ingredients

For Oatmeal Creme Pies:

  • 1cupunsalted butter,softened
  • 1cuplight brown sugar
  • ¼cupgranulated sugar
  • 2largeeggs
  • 2tspvanilla
  • 1tbspmolasses
  • cupsall purpose flour
  • 1tspbaking soda
  • 1tspcinnamon
  • ¼tspcloves
  • ½tspsalt
  • 1tspcocoa powder
  • 3cupsold fashioned oats

For Creme Filling:

  • ¾cupunsalted butter,(1½ sticks), softened
  • 3cupspowdered sugar
  • tspvanilla extract
  • 2tbspheavy cream or milk

Instructions

  1. Preheat oven to 350 degrees F.

  2. Add butter and both sugars to a stand mixer with the paddle attachment. Cream until light and fluffy.

  3. Add in eggs, vanilla and molasses and mix until combined.

  4. Combine flour, baking soda, cinnamon, cloves, salt and cocoa powder in a medium bowl.

  5. Slowly add in the dry ingredients to the mixer just until combined.

  6. Fold in oats.

  7. Drop large 2 tablespoon sized cookies on a baking sheet lined with parchment paper or a silicon baking sheet.

  8. Bake for 12 to 15 minutes or until golden brown.

  9. Let the cookies cool for a couple of minutes on the baking sheet and transfer to a wire rack to cool completely.

  10. While cookies are cooling prepare the cream filling.

  11. Add butter to a stand mixer with the paddle attachment. Cream butter until light and fluffy.

  12. On low speed add in powdered sugar.

  13. Add in vanilla and heavy cream or milk and mix until combined

  14. To assemble spread about 1 to 2 tablespoons of creme filling onto the bottom side of half of the cookies. Top with the remaining cookies and enjoy!
